For all of our snarky comments about the French, from their snootiness to their smoking to their propensity for revolutions, we (and the 'we' here refers to Americans in general) have a mild francophilic obsession with the cuisine. Calling a dish 'coquillettes au gratin' rather than 'macaroni and cheese' must mean it's truly gourmet rather than good old comfort food. Nevertheless, Chef William has come up with a small menu (about 10 appetizers and 10 dishes) of authentic French cuisine that will no doubt tantalize many Denver palates. The house fills up, so be prepared to wait, and for the possibility that your dinner pick may not be available if you're not eating with the first crowd.
