At Walton Doughnuts, Kong the baker (yes, that’s really his name) comes in at 11 p.m. each evening to start working the dough for the following day’s treats. By the time 5 a.m. rolls around he’s created plenty of miracles from flour and sugar: Donut holes, apple nuggets, raised and cake donuts, twists, bars, jelly donuts, éclairs and fancies.
