La Cueva (the cave) was a name given to a restaurant that was known as a gathering place, for family and community alike. La Cueva lives up to its names standard by bringing everything their culinary family has to the table. They serve recipes that have been perfected through the family for ages, which now move through the hands of one of the younger members of the Nunez clan, whose culinary background and schooling allows him to add his own "flavor." From their real egg batter rellenos to Grandma’s mole recipe, everything has its place in the restaurant and also their cookbook, whose proceeds go to the Nunez Foundation for scholarships to deserving youths. It’s been 25 years since the Nunez family opened the Colfax staple, and while many kitchens in Mexican restaurants store more cans than a food drive, you won’t find any here. Everything is prepared with homemade ingredients and made to order, which is why it may take a little longer than you’re used to to get your meal. Don’t worry, you can gorge yourself on some of Denver’s best chips and salsa while you wait.
