Part of the Timbers Hotel, Peoria Bar & Grill serves up contemporary Western cuisine in an upscale ranch environment that would have both Robert Redford and the Marlboro Man nodding in approval. The menu changes seasonally, but chef specialties such as ribs, beef brisket and cowboy chicken (all barbecued), and several choices of Black Angus steaks are always available. Sandwiches, salads and wrangler-inspired appetizers offer a taste of the Wild West on the Front Range.
