Goods: Fresh water eel, albacore tuna, cucumber, avocado and flying fish roll.

Dish: It behooves Japon to make sure the hometown is well represented, and that they did. Sweet, but not overpowering, the unagi took a rare backseat to the rest of flavors and was balanced nicely by the saltiness of the roe liberally sprinkled throughout. The tuna was delightful and still managed to shine despite the zing of its fellow roll-mates.
