Ah, college. The greatest days of your life. Assuming by "greatest," you mean "I have $17 to live on for the rest of the month." The great thing about Denver, though, is that you're never far from an affordable omelet, cheap taco or bargain burger. The trick is finding some variety beyond the standard pancake-bacon-eggs plate, which is where the following list comes in. Plus, these restaurants are close enough to campus that even your roommate's gas-starved subcompact stands a good chance of making the return trip.

Chipotle
1644 E Evans Ave - DenverIn 1993 Steve Ells decided to open a small burrito store on the corner of Evans and High Street. He estimated that he needed to sell an average of 107 Burritos a day at his small local restaurant in order to break even. After the first month Ells was selling well over 1,000 burritos a day and began to expand his business into a multi-national company that rakes in $126 million a year. The DU Chipotle is where it all started, and their awesome burritos make this tradition easy to keep alive.
