Granted, all the pork and beef marinating in these bowls of goodness don’t leave the soft carbon footprint Al Gore would like, but what better way to celebrate Mother Earth than with Colorado’s best green chile? With varieties from a thicker, southwestern Tex-Mex stew, to thin fire-starting sauce, the only green this state knows better was celebrated on 4/20 up in Boulder.

The hippest joint on the list, you usually don’t expect too much from the food from a place that has obviously spent a lot of energy on the atmosphere. Not so at Lime, the green is good and is a bit mild if you want to soften the following day. Not what you would call traditional, but remember, the place is trendy, hence trying to be a trend setter.

The menu selection is traditional Mexican with fajitas, tacos, enchiladas and burritos, but this is all with the award-winning green chile. More of a stew-like consistency, if you don’t like the thick stuff maybe this is not your dish. But if you’re up for a full meal where you never have to stray from the verde heaven, grab a bowl.

There is no myth involved in the legendary green chile though. The common home for it atop the breakfast burritos, but order a side and it will make any dish come alive with a bolt of thunder.

You wouldn't think a college sports bar would be a staple for the green goodness, but if you pass on the Campus Lounge you will be sorry. While grand by itself, it usually comes slathered on everything from the tortilla chips to the quesadillas.

The numbering of this string of Tex-Mex eateries can be a tad confusing when trying to figure out which is which, but when you taste the unthickened chile there will be no mistaking where you are at. Brewery Bar’s bowls are some of the spiciest in town.
