One of the sexiest chefs comes to Denver

Things we’d heard about ChoLon, the brand-new, modern Asian bistro on 16th and Blake: 1. the food is fresh, healthy and awesome, and 2. chef Lon Symensma is smoking hot. After checking the place out for ourselves, we can confirm that yes, the food is delicious and, perhaps more importantly, that Symensma is indeed the cutest thing to come to Denver since polar bear babies Klondike and Snow.
ChoLon means ‘big market’ in Vietnamese, which is important because it sums up the entire feel of the operation. In the restaurant scene, ‘modern’ has become synonymous with pretentious, but not here. The atmosphere feels authentic and natural, and although the décor is Asian-influenced, it’s not beat-you-over-the-head with chubby Buddhas and cheesy paper lanterns.
