Verdict: Short ribs are again one of those meals where the sauce is just as essential as the meat. For that reason, it makes perfect sense this plate only finds its way onto the menu for special occasions; the tangy sauce permeates all the way through the tender beef, an experience that only comes with significant marinating. The bok choy side is meant for more of a garnish but also provides a nice crisp green to clean up the palate.
