The Dish: Born in South Korea, Young has been studying the art of sushi for the past 20 years, learning his craft from his older brother. Coming to Denver (Aurora) via Los Angeles, he was excited to finally have is own restaurant with Katsu. While the table dining is nice, to get the full experience sit at the bar, where Young seems to always be working-- his skill is only challenged by his sense of humor.
