Fish: Tuna.
Dish: Solid. Doused in garlic ponzu, the tanginess explodes the flavor of the flash-cooked tuna. The tomatoes and avocado give some Latin flair to an otherwise traditional Japanese dish. This is exactly what makes Katsu so much fun. There is grounding in the sushi classics, but Master Young adds his own wild artistry and makes every bite something worth coming back for.
