Second Course: Stuffed Quail with Gordon
Second to come out of the kitchen was quail stuffed with sausage and cornbread with an apple whiskey jus. At first one might wonder how you could stuff such a small bird with such meaty components, but Duo's quails must have been doing some calisthenics as they had some of the largest breasts this side of "The Girls Next Door." We say calisthenics as we know they weren't on steroids or artificially enhanced as the restaurant prides itself on using only natural and organic ingredients from local farms and ranches. The back and forth between chef and brewer was evident as Oskar Blues brought out the strong stuff in the form of Gorden, an Imperial Red/Double IPA hybrid. With ten days of dry hopping, "it gives the beer an aroma like your grandma's homemade jam with a controlled substance you were familiar with in high school," explained Jones.
