Since Colorado is land-locked, the state has had to be inventive when it comes to seafood. One such patent covers the Rocky Mountain Oyster and if you don't know what that is you should try one first and then ask someone who knows. Thankfully at Highland Pacific, their seafood actually comes from the sea. From po-boys, crab cakes and yellowfin tuna to the above average raw bar selections you can almost smell the ocean at this Highlands eatery. Swing through during Happy Hour for discounted menu items for under a dollar.
