In the past decade Colfax has experienced an explosion of Ethiopian restaurants. Axum is among the best. Never eaten the Ethiopian way? Some people are surprised upon their first visit to find that you eat everything with your fingers. The meals come in several courses and are served on large common platters for everyone to share. They have a full bar, but be sure to try the Mamba beer -- over-sized bottles of traditional Ethiopian brew.
