Salmon in Colorado is always questionable
While it was our least favorite thing on the menu, let's couch that by reminding you: This is a 4-star menu we're talking about here. And it is hard for a mountain restaurant to compete with a place that plucked your dinner from the ocean that morning.
Verdict: But, we're underselling it here. Let's start over. If you've got a hankering for seafood, this will certainly fit the bill. The sweet, mild honey-bourbon sauce steals the show here. It drenches a thick slab of char-grilled salmon. The crispy coating gives way to an über-tender middle, and then it all just melts together for a perfect combination.
On the side, we had a cheese-rich helping of potatoes au gratin. Seeing as how our taste buds get happier as the level of cheese increases, the helping was taste bud ecstasy. And don’t forget the steamed vegetables on the side – as the butter sauce from the veggies mixed with the honey-bourbon from the salmon, it was all good in the hood.
