Chinese restaurants have a distinct advantage over most ethnic cuisine. While many Americans speak Spanish or French, very few of us know Mandarin (or any other dialect spoken in China). For all we know, Ding-ho could mean “white trash” or “Suck it, Trebek!” We’ll just assume it’s an appetizing description of their food, such as pine seed chicken lettuce pockets and lo mein.
