Japon is one of those sushi joints that have you saying from the moment you walk in: “Why didn’t I hear about this place before?” How it is still a relative secret in the raw fish going community is a mystery in itself. Perhaps the Wash Park crew intentionally keep the marketing to a minimum to salvage what little parking they have left. Regardless, the word is out, and the word is Japon.

Taking a road trip on the palate, we recently tried a handful of their city-themed hand rolls, and the journey was a brilliant one.
