Great sushi, still undiscovered

Sushi Katsu is in Aurora. But trust us, it is as good as they come. It is this location that still keeps it one of the undiscovered gems in the sushi community. Nevermind that the cross cultural Asian ties (the owner is from Korea and the restaurant is located in a Korean strip mall) allow for both sake and soju, Sapporo and Hite, more noticeably (and soberly) it allows for its namesake Master Young (his Japanese name is Katsu) to step far outside the bounds of traditional rolls and nigiri. Celebrating one year in business this past November, Katsu is a solid sushi bar regardless of whether it is in the burbs or not. The inside dècor (as well as the equipment) has all been shipped here from Los Angeles giving it a Little Tokyo-like feel. There are always American classics playing, from Sinatra to early jazz, injecting even more of the modern fusion vibe.

Taking a look at six of the signature rolls (not all are on the menu, but always available by special request,) we quickly discovered how unique this joint is.
